Oatmeal Honey Bread | Buttered Side Up
Fresh oatmeal honey bread! I participated in the Joy the Baker x King Arthur Flour Baking Boot Camp. It was fun and I got fresh bread out of it.



Seaweed snacks! Helen LOVES these. Which reminds me, I need to buy more...



Homemade Sauerkraut
I made my own sauerkraut! Helen (and her cousins) adore it. I need to start another batch. And I think I'll get some of these glass weights to make my life easier.



A shot of the ingredients for my Leek and Asparagus Tagliatelle. Sometimes I like the photos I take with my phone just as much as the ones from my "big camera" (DSLR).



I love brown eggs. Reuben's family's chickens started laying. I am so pleased to have a source of good eggs.


I sprouted wheat, dehydrated it and ground it into flour. I'll have to make a tutorial for you guys sometime...



Fry bread! Smothered with buttered and sprinkled with cinnamon sugar. I've eaten this my whole life. It is amazing. This is another one I'll have to share here on Buttered Side Up once I figure out a good recipe.



Easter Egg! Helen was so proud to have found (with help) an egg.



I was a day late, but I just had to color an egg.



Dinner rolls! I made these for Reuben's family's Easter get-together. They turned out really well, despite a clumpy flour scare. You can get the recipe HERE.



Ah, what food blogging will do to your kitchen.


I've been trying to get the kitchen clean first thing in the morning. It makes me happy and more likely to want to cook.

Seaweed Snacks, Sprouted Wheat, and a Messy Kitchen


Wooden spoons.
Reuben's sister, Amanda, gave me these lovely wooden spoons for Christmas. They are going to make excellent food props.


Hand embroidered tea towels.
Look at the lovey tea towels that Reuben's other sister, Bree, made for me. The embroidery is impeccable.


Dried figs.
Dried figs are nice. I'll tell you what I made with them in an upcoming post...


Fancy.
Helen likes to wear my pink-and-green Christmas socks. With pink heels, of course.


Winter Sunrise
Winter can be so bleak, but the sunrises are glorious.


Birthday!
Last Saturday was my birthday! I turned 25. I still feel like a kid. We ate mac and cheese with bacon for lunch and had ice cream for dessert. It was a good day.


Birthday Bowl
Reuben bought me this bowl for my birthday. I love it to pieces. He knows me well.


Cheerios
I get ridiculously excited about cheerios (these are actually Cascadian Farms' version of cheerios).


Snack
Emergency snack: a spoonful of peanut butter with (dark) chocolate chips poked in. A glass of cold milk is not optional.


Carbonara
Carbonara. It's a glorious thing. And so quick and easy. I've used Pioneer Woman's recipe before, but now I just wing it.

It's been a little while since I've done a Phone Friday Post, so I thought it was high time I updated y'all on what's been going on in my life, food and otherwise...


Egg on Rice
My go-to lunch for the past few months has been (what I call) Egg on Rice. I really like it with butter, kimchi, ginger, frozen peas, a fried egg and some sort of meat. So so good and satisfying.



Homemade Sushi
We made sushi! My sister decided to host a sushi making party. I must admit that I was a bit skeptical about it working out, but it was delicious.




I had the best tasting coffee shop breve ever (and it came with pretty art). You see, I usually don't like coffee from a shop as much as homemade, but this breve from a local establishment was very good and didn't taste fakey.






My little sister bought me a set of phone lenses for Christmas. It's been really fun playing around with them, especially the macro lens.




CHOCOLATE HAUL! I was hoping that I would get chocolate for Christmas, and my family did not disappoint.





And I leave with my sad attempt at hand lettering. That should be a goal of mine this year: get better at hand lettering (or painting in general).

Phone Friday: Over the Holidays...




Hooray for Friday! 

On Sunday I suddenly contracted a nasty head cold that lasted for a few days. I was unable to do as much recipe testing for y'all as I had planned. There's always next week!



Pumpkin Seeds

I cooked up some pumpkins for puree the other day, and Reuben requested that I roast the pumpkin seeds. I used Nourished Kitchen's method for soaking and cooking them, except I only tossed them in 2 tablespoons of butter instead of the egg whites and other seasonings. They were quite tasty - I had to stop Reuben before he ate them all. :)



Kale Chips

I made kale chips for the first time! It's surprising how easy they are. All you do is wash the leaves and cut out the center rib, massage them with a bit of olive oil, sprinkle with sea salt and bake at 300 for about 25 minutes, rotating halfway through. They got really crispy. Helen loved them.



Hash browns

This morning I had some extra time to make breakfast, so I decided to make hashbrowns. They're Reuben's favorite. He loves them so much that he found a recipe and made them himself the other day. He claims that the ones I made were twice as good as his (I used the same method), but I think it's because of all the butter I put in the pan.

Here's the method: Grate potatoes (we've used russets or reds) over a bowl of cold water. Rinse and squeeze out the excess water using a dishcloth or paper towel.
Heat a large cast iron pan over medium high heat and melt lots of butter (I used half a stick for 2 potatoes). Add the potatoes in a thin layer, turn the heat down to medium and season with some salt and pepper. Cook until crispy. Flip and cook until the other side is crispy. Devour.

Phone Friday: Pumpkin, Kale and Hashbrowns



First of all, let me apologize in advance for the number of Helen photos in this post. What can I say? She was pretty cute this week. 


Butternut Squash Soup
With the butternut squash I found at the Farmers' Market I decided to make a soup. Reuben didn't care for it, but Helen and I really enjoyed it. 

Here's what I did: Sliced the squash in half, scooped out the seeds and put it in a big roaster pan. Added an apple, half an onion and half a head of garlic. Spread ghee on the squash + garlic and spooned it over the apple + onion. Baked at 400. Added beef broth as need to keep things from getting too burned. Scraped out the squash and added everything to a blender with some more broth. Pureed until smooth. Added salt to taste. Served with cream drizzled on top.

If I did it again I would cook the squash by itself for a while before adding the other ingredients. I would also wrap the garlic in some parchment paper - it got a bit too done.



Oops...
One evening Helen decided to give herself a yogurt hair mask. Maybe it will help her hair to grow in. :P



Target Haul
I got stuck in the Target dollar section. It's a dangerous place, folks!



Enjoying her soup...
I LOVE making my own broth. It makes the best soups. I'll have to do a post about it sometime. 



The folks at Natural Balance Foods sent me some of their fruit and nut bars to review. So far my favorite flavor has been the gingerbread. I'll have to do a more in-depth review once I try out all the flavors.



Snowy Day
We had quite the snow day on Tuesday. Of course it didn't stick, but it won't be long before we have to don our snow boots before heading outside. It was 20 degrees this morning. Brrrr.

Hey everyone! Hope you've had an awesome week. I'll admit that this week seemed to drag a bit. Hooray for Friday!

Here are some awesome things I've made/purchased recently:


Green Smoothie
My first actually green smoothie. I cooked my greens (kale) first, as advised by Carrie from Deliciously Organic. This was delicious and refreshing. 

Here's what I used: frozen peaches, kale, milk, cream, maple syrup and grass-fed gelatin. To my surprise, the kale seemed to complement the flavor of the peaches.

Crispy eggs are delicious and fun to eat. I used the method outlined by Deb from Smitten Kitchen



New Tea Kettle
I bought a new tea kettle! It's adorable (from Japan) and makes pouring water into my Aeropress so much easier.



Homemade Ghee
Homemade ghee is so so easy. I made it one morning before Reuben went to work. I used Heidi Swanson's method.



Farmers Market/Healthfood Store Haul
Earlier this week I went to our local health food store and the farmers' (is that the proper way to spell it?) market. We got all this for less than $45.



I tried cinnamon in my cocoa for the first time the other day! It was good, but I think I need to put more in next time. #latergram #cocoa
I finally broke down and tried cinnamon in my cocoa. It adds a lovely depth of flavor. Next time I need to use more...



Avocado Hummus
Avocado hummus. It's yummy. Helen gobbled down several spoonfuls.



Doughnuts
I made doughnuts, guys! For breakfast, even. I had some leftover bread dough from making fry bread tacos last night. We couldn't think of anything else to make for breakfast, so I fried up the dough, dipped it in butter, and rolled it in powdered and cinnamon sugar. I'm not a doughnut girl, but these were delicious. 
Just so you know, we had eggs as well - it wasn't an all-carb breakfast. ;)

Homemade Pumpkin Pie Spice | Buttered Side Up

Ever since I discovered that you can mix your own spices I have shied away from the pre-mixed store-bought varieties. I'm sure there are some lovely blends out there, but there's just something nice about knowing exactly what and how much of everything goes into your seasonings. 

Plus, if you prefer to use organic spices, it can be a more affordable option. I like to buy my spices a little at a time from the bulk bins at our local health food store. That way I don't keep an entire bottle of cloves in my drawer for a few years until it goes stale. 

Note: If you don't like a particular spice used in the recipe, feel free to leave it out! Also, if you're out of a spice (with the exception of the cinnamon), it's not going to be the END of the world if it isn't put in. 


Homemade Pumpkin Pie Spice
adapted from My Baking Addiction

Ingredients:
  • 3 tablespoons cinnamon
  • 2 teaspoons ginger
  • 2 teaspoons nutmeg
  • 1 teaspoon cloves
  • 1 teaspoon allspice, optional (I didn't have any on hand so I left it out)

Directions:

Mix everything together and store in an air-tight container. Use as you would store-bought pumpkin pie spice.
